Real Minero Pechuga is a rare find, as this style of mezcal is made sparingly, because it's traditionally reserved for celebrations. It's triple distilled, and during the last distillation, the mezcalero adds fresh fruit to the mix and suspends a raw chicken breast in the still so that the vapor passes through the chicken to amplify the savory characteristics of the spirit. Overall, it's full-bodied, with a honey-like mouthfeel, and flavors of smoke, dried fruits, and apples.

The family behind Real Minero has been making mezcal for several generations and they're known worldwide for their small batch bottlings. Now run by the sister/brother duo of Graciela and Edgar Ángeles Carreño, their mezcal is produced in clay pot stills, then rested in glass for several months before bottling. This gives their products a signature mouthfeel that's soft and full bodied. Supported by the local community, Real Minero also operates an agave reforestation program that's saved several agave varietals from extinction.
