Keith Barnes, master distiller at Bainbridge Organic, doesn't do basic and he definitely doesn't source. This is his first bourbon release and he pulled out all the stops. It's bottled in bond and 100% organic. Everyone's using char 4 barrels, so Barnes uses Char 3. Rye and barley are mash bill staples so Barnes goes with wheat and triticale - a grain you've probably never heard of. This bourbon has notes of cherry, vanilla, citrus and caramel, with just a hint of fresh char. A gold medal winner at the 2021 San Francisco World Spirits Competition, this was a gift-shop-only release... until now.
- Age 5 Years. 6 Months.
- Mash Bill 60% Heirloom Corn. 25% Old Variety Triticale (a rye-wheat hybrid). 15% Soft White Wheat.
