Hillrock Estate Distillery Bourbon - Dakota Shy Cabernet Cask Finish

Located in New York's Hudson Valley, Hillrock Estate is one of the last distilleries Dave Pickerell worked on before his untimely passing in 2018. Hillrock is one of the only American distilleries to grow its own grains, and floor malt on site. Their award-winning whiskeys are truly field-to-glass. This limited-release bourbon is aged in Hillrock's Solera and Oloroso Sherry casks, finished in Dakota Shy Cabernet wine casks from Napa Valley, then bottled at 92.6 proof.

According to the distillery, "The whiskey offers a caramel-vanilla nose full of fruit (cherry, blackberry and citrus) and sweet desserts (taffy, caramelized sugar, plum and caramel). Warm and sweet notes of vanilla, toffee and French oak complimented by a bouquet of floral and fruity notes – black cherry, currant, violet and nuts complete the palate before leading to a long and vanilla-focused finish, highlighted with cherry and cabernet flavors.
