Hillrock Estate Distillery Bourbon - Owner's Special Reserve Cognac Cask #4

Located in New York's Hudson Valley, Hillrock Estate is one of the last distilleries Dave Pickerell worked on before his untimely passing in 2018. Hillrock is one of the only American distilleries to grow its own grains, and floor malt on site. Their award-winning whiskeys are truly field-to-glass. This limited-release bourbon is aged in Hillrock's Solera and Oloroso Sherry casks, then finished for 76 days in a Cognac cask before being bottled at 118.3 proof

According to the distillery, "This remarkable amber whiskey gives cherry, apricot, and mango on the nose with a fruity-floral bouquet, building towards a long ending of vanilla and cherry notes from the Cognac."
